  2. Get 250 g noodles

  1. Preheat the oven to 180°C
  2. Wrap the salmon fillets in foil and place in the oven for 14 minutes
  3. Chop carrots, cucumber, red pepper and mint and mix in with peas
  4. Boil water and place noodles in the water for 4 minutes, then drain
  5. Mix the vegetables in with the noddles and place in a wok
  6. Add sweet chilli sauce, lime, chilli and cook on a high heat for 2 minutes
  7. Plate the noodles and vegetables and top with the salmon and sliced spring onion

Place the salmon in a grill pan. Rub with a little oil, season with salt and black pepper and squeeze over the remaining lime. When cooked, remove your salmon from the oven and top each salad bowl with one salmon fillet. Heat the chilli, ginger and lime dressing as per packet instructions and divide over your salmon fillets (one pack between two fillets). Garnish with sesame seeds and a squeeze of lime.
