This Salmon Quinoa Salad is a light, healthy and filling summer dish with a zesty creamy dressing, perfect for and easy dinner, or lunch. Its crispy pan fried salmon, together with a quinoa salad of cucumber, mint, coriander, Spanish red onion, baked sweet potato, capsicum and optional chickpeas and lightly toasted walnuts. Combine salmon, cooked quinoa, halved cherry tomatoes, diced cucumber and onion, and chopped basil leaves in a large bowl. Season with the remaining salt and freshly ground black pepper.

Instructions to make Salmon Quinoa Salad:
  1. Mince red onion and cover with lime juice.  Set aside.
  2. Cook fish skin side down on med-high heat in coconut oil.  I like to add capers but this is optional.  Cook salmon about 6 min each side.  When finished set aside and let cool.
  3. In a bowl add quinoa, chopped broccolini, drained chickpeas, halved cherry tomatoes, cilantro, salt, pepper and garlic salt.  Add salmon, I like to shred it and mix it in but it can also be served on top of quinoa salad.

Combine salmon, cooked quinoa, halved cherry tomatoes, diced cucumber and onion, and chopped basil leaves in a large bowl. Season with the remaining salt and freshly ground black pepper. Drizzle with olive oil and with the salad dressing on top, and toss gently to combine. Mix together the chopped cucumber, mint and yogurt to make a creamy tzatziki. Stir the parsley into the cooked quinoa.
