Very filling, definitely can be a main course! My only suggestion is to add some extra broth because the noodles soak it all up. Or recently when I made it, I made the noodles seperately and just poured the soup over the noodles. I also added kidney beans as well because I like a lot of beans in my minestrone.
Instructions to make Very Filling Minestrone:
- Cut the vegetables into small dices. Spring cabbage is nice in the spring.
- Add the garlic to a generous amount of olive oil. Start sautéing the vegetables, starting with the harder ones and adding the softer ones later.
- Season the vegetables properly with salt and pepper at this stage!
- When the vegetables are more or less cooked…add enough water to cover as well as the ☆ ingredients, and simmer!
- Simmer for a while, skim off any scum. Add the ★ ingredents and keep simmering over low heat. (About 30 minutes.)
- When the vegetables are tender, the soup is done!! It has lots of vegetables, so the soup alone will fill you up.
- We enjoyed the soup as 'soup pasta' the next day. Top with cheese of your choice!
