  1. Toast Almonds (OR other nuts of your choice) until lightly browned, then coarsely chop. Today I used Almond Flakes.
  2. Make Caesar Dressing. Lightly season it with Salt & Black Pepper.
  3. Blanch Broccoli in boiling salted water, but do not over-cook as they should remain crunchy. Drain, cool under cold water, then drain well.
  4. Combine Broccoli, Caesar Dressing, Almonds and Parmesan. Add extra freshly ground Black Pepper and serve.

Plate up, topping with more capers, croutons, dressing and parmesan. Prepare romaine hearts by slicing into bite sized pieces and toss into a large mixing bowl. Drain and pat dry broccoli, and add to the romaine bowl. Add dressing, and using your hands, massage the dressing into the salad. Toss in sprouts or other delicate green of choice and gently toss again to coat.
