  2. Whilst the pasta is cooking, start making the dressing, mash the avocado, then mince the garlic and add with the olive oil and lemon juice and seasoning and mix together
  3. Then chop up the mushroom and defrost the vegetables in the microwave and set to the side until the pasta is done
  4. Remove pasta from pan and place in a different bowl. then put some oil in the sauce pan with another minced garlic clove, then add the vegetables once oil has heated up. cook until the mushrooms have reduced in size. add the pasta and remove from the heat. then stir in the sauce. and plate up
