The ingredients needed to make Low Fat Pasta Salad:
- Make ready 1 Cucumber (peeled & quartered)
- Get 1 packages Grape Tomatoes (I cut mine in half)
- Make ready 1 Green Pepper (Chopped)
- Prepare 1 box Whole Wheat Pasta (Cooked according to package)
- Take McCormick Salad Supreme (I usually use the whole thing)
- Prepare 1 envelope Good Seasons Italian Dressing
- Get 4 tbsp Balsamic Vinegar
- Get 1⁄2 cup olive oil, extra virgin
If you don't like onions skip it, if you love cucumber then load up on them. Swap out whole grain pasta to bump up the fiber, and make the dressing with a mix of mayo, sour cream, and Greek yogurt to keep it on the lighter side (rather than using all mayo). Drain the pasta and asparagus, and rinse them in cold water. Mix together mayonnaise (I used this delicious Chosen Foods avocado oil mayo !), sour cream, and Dijon mustard in a bowl.
Instructions to make Low Fat Pasta Salad:
- Prepare pasta according to box.
- Mix your Good Seasons Italian Dressing as directed, using the balsamic vinegar and olive oil..
- Combine all ingredients and mix well.
- I find it's better the next day, so if you can, let it chill overnight.
Drain the pasta and asparagus, and rinse them in cold water. Mix together mayonnaise (I used this delicious Chosen Foods avocado oil mayo !), sour cream, and Dijon mustard in a bowl. Stir the mixture into the pasta and asparagus, together with some halved cherry tomatoes. Stir well to mix and add plenty of salt and black pepper to season. My traditional pasta salad used regular pasta, full-fat cheddar cheese, regular mayonnaise, and the ever-popular spam.
