I doubled the pasta and used about half the amount of onion. I also used only the whites of the hard boiled eggs and the yolks weren't missed at all. I didn't have elbow macaroni in my pantry so I used small penne and it was just fine. Combine pasta, eggs, celery, pepper, onions and parsley in a large bowl.

- Boil pasta in hot water for 10 minutes. Remove from the gas and allow it to cool.
- Chop all the veggies finely and dry roast peanuts and cool them.
- Now take a bowl and add boiled pasta and chopped veggies spices and mix well and now add lemon juice and mix well.
- Garnish it with fresh coriander leaves and sprinkle some Cajun spice on top and serve.
